Super Food Salad

 

Ingredients:

100gms grilled chicken breast
½ cup tightly packed mixed green salad leaves
½ cup tightly packed sprouts (such as alfalfa or snow peas)
¼ cucumber, chopped
½ avocado, cubed
1 tsp Chia Seeds
1 tsp Pepita Seeds

Dressing:

Juice ½ lemon
½ tsp wholegrain mustard
1 Tbsp Apple Cider Vinegar
1 pinch Celtic Sea Salt
Pepper to taste

Directions:

1. Place all the salad ingredients, chia and pepita in a bowl. Thinly slice the chicken and place on the salad.

2. Place all the dressing ingredients in a jar and shake well. Pour over the salad just before serving.
