Salad Nicoise


  • 85gms tuna, canned in springwater, drained
  • 1 hardboiled egg, peeled and quartered
  • Celtic Sea Salt & Pepper to taste
  • 1 cup Cos lettuce leaves, chopped/torn
  • 2 tablespoons red onion
  • 2 cherry tomatoes, chopped
  • 2 ounces green beans, trimmed and cut
  • 3 Kalamata Olives
  • 1 teaspoon capers


  • 1 tsp Apple Cider Vinegar
  • 1 tsp Whole Grain Mustard
  • 1 Tbsp Extra Virgin Olive Oil


  1. Bring the potatoes to a boil in water and cook until tender. Allow the potatoes to cool. Using the same water, blanche the green beans until tender.
  2. Toss the lettuce with dressing of choice and place on a plate.
  3. Top with tuna, tomatoes and onion.
  4. Toss the green beans with dressing and add to the salad.
  5. Top the salad with eggs, olives and capers.
  6. Place all dressing ingredients in a jar and shake well. Drizzle salad with dressing just before serving.
