Salad Nicoise (Serves 1)

Salad Nicoise

  • 100 g (3.5 g) tuna (cooked steak or canned)
  • 1 hardboiled egg, peeled and quartered
  • Celtic Sea Salt & Pepper to taste
  • 1 cup lettuce leaves, chopped/torn
  • 2 tablespoons red onion
  • 2 cherry tomatoes, chopped
  • 2 ounces green beans, trimmed and cut
  • 3 Nicoise Olives
  • 1 teaspoon capers
  1. Bring the potatoes to a boil in water and cook until tender. Allow the potatoes to cool. Using the same
    water, blanche the green beans until tender.
  2. Toss the lettuce with dressing of choice and place on a plate.
  3. Top with tuna, tomatoes and onion.
  4. Toss the green beans with dressing and add to the salad.
  5. Top the salad with eggs, olives and capers. Drizzle with dressing of choice and serve immediately.
