Quinoa and Apple Porridge

 

Ingredients:
½ cup dry white quinoa (whole grain)
Squeeze lemon
2 cups water
½ green apple
1 tsp LSA
1 tsp Chia Seeds
½ tsp cinnamon
Directions:
1. Place quinoa, 1 cup water and lemon juice in a container and soak overnight (if you forget to soak make sure that you rinse the quinoa very well and add 2-3 minutes onto the cooking time).
2. Drain the quinoa and rinse well. Place in a saucepan with approximately 1 cup water, or until well covered.
3. Place over a medium heat on the stovetop. Cook for 3-4 minutes, stirring occasionally.
4. When there is still a little water in the bottom of the saucepan remove from the heat, cover and allow to steam for 4-5 minutes.
Grate the apple. Add the apple, LSA, Chia and cinnamon to the quinoa.
5. Mix well and serve hot.
