Nut Encrusted Salmon

  • 1 tablespoon chopped fennel fronds
  • 1 tablespoon chopped basil leaves
  • ½ tablespoons Dijon mustard
  • Dash Celtic Sea Salt & Pepper
  • 1 Salmon Fillet, skin removed
  • 1 tablespoons lemon juice
  • 1 tablespoon organic butter, melted
  • ¼ cup chopped pecans
  1. Preheat the oven to 200°C/400°F.
  2. Combine the fennel, basil, mustard, salt and pepper in a small bowl.
  3. Rub the salmon fillet with the mixture then drizzle the salmon with the lemon juice.
  4. In a small bowl, combine the butter and pecans.
  5. Top the fillet with the mixture and roast for 15 – 17 minutes or until the salmon flakes easily. Serve with mashed cauliflower and steamed greens.
