Herb & Pine Nut Frittata (2 – 3 servings)

This is such a simple dinner dish and lasts really well for leftovers the next day.

• 6 eggs
• 1 ounce grated Parmesan
• ½ teaspoon black pepper
• Pinch Celtic Sea Salt
• 1 teaspoon organic butter
• ½ cup chopped spinach
• 2 tablespoons diced onion
• 1 clove garlic, minced
• ½ teaspoon ground thyme
• 2 tablespoons pine nuts, toasted
• 1 tablespoon parsley leaves, chopped

1. Preheat the oven to broil/ grill.
2. In a medium bowl, whisk together the eggs, cheese, pepper and salt.
3. Use an oven safe non stick, non toxicskillet or pan and heat the butter on medium high heat.
4. Add the spinach, onion, garlic, thyme and pine nuts. Stir gently while cooking for about 3 minutes.
5. Continue to cook until the egg mixture begins to set on the top and bottom.
6. Sprinkle on the parsley and broil/ grill for 3 minutes, or until it is lightly browned and fluffy.
7. Serve immediately.
