Gluten Free Bread with Cottage Cheese, Tomato and Rocket

Ingredients:

¼ cup cottage cheese
1/2 tomato, sliced
½ cup rocket or baby spinach
1 slice rice bread (or any gluten free, soy free breads)
Celtic Sea Salt
Pepper

1. Toast bread.
2. Spread with cottage cheese.
3. Place the tomato on top of the bread.
4. Salt and pepper, to taste.
5. Top with rocket or spinach.
