Chickpea, Peanut Butter and Choc Chip Cookies

pbcookiesR_IMG_0195I apologize in advance for the deliciousness of these little morsels! They are such a good treat high in protein, low in sugar and very filling. The only problem is they taste so good it’s really hard to stop even when you are full!! I like to make these on a rainy day when my family is home so they can help eat them. Enjoy.

Ingredients:

  • 1 tin chickpeas, drained (or 1 ½ cups cooked chickpeas)
  • ½ cup natural peanut butter (no added sugar, salt or oil)
  • ¼ cup unsweetened almond milk
  • 1 tsp vanilla essence
  • 1 tsp gluten free baking powder
  • 70gms dark chocolate chips (sugar free if available)

Directions:

  • Place all ingredients in a food processor, except chocolate chips
  • Blend until well combined. Then stir in the chocolate chips.
  • Take approximately 1 Tbsp of the mixture form into a cookie shape then place onto a lined baking tray. Makes approximately 15 cookies.
  • Place in a 200° C or 360° F oven for 15 minutes or until golden on top. Allow to cool for 5 minutes.
  • Place in an airtight container to store.
