Chicken Salad

Ingredients:

  • ½ cup lettuce leaves, shredded
  • ½ cup grated carrot
  • 2 ounces shredded chicken
  • 1 slice Swiss cheese
  • 2 slices tomato
  • 1 tsp olive oil
  • Lemon juice
  • Celtic sea salt
  • Pepper to taste

Directions:

  1. Place chicken on an oven tray, top with tomato and cheese. Place under a hot grill until cheese is melted.
  2. In a serving bowl place the lettuce and carrot. Dress with lemon, olive oil and salt and pepper.
  3. Place the chicken from the oven on top of the lettuce and carrot mix.

  1. Choosing your chicken, meat and dairy.
  2. Always choose the best quality that you can afford. I always recommend organic free range chicken and eggs. Grass fed, free range beef and pork and organic (possibly raw) dairy products.
  3. Raw dairy is illegal in a lot of places, due to past disease outbreaks and therefore unavailable.The benefits of raw dairy is that it contains beneficial bacteria and enzymes that our bodies require for optimal health. Once the milk it is pasteurised and homogenised these are killed.
