Buckwheat Pancakes

Buckwheat Pancakes



1 egg
1 Tbsp Ricotta
¼ cup buckwheat pancake mix or Gluten Free Pancake mix
½ tsp of butter or coconut oil.
½ cup Mixed Berries (frozen works best)
1 tsp Stevia or raw honey



1. Mix ingredients together, it should be slightly thicker than the consistency of a regular pancake, if the mixture appears too thick add a little water.
2. Cook in a small non-stick, non- toxic pan with ½ tsp of butter or coconut oil. Make sure that the pan is not too hot, should be at a medium heat.
3. Cook until you see bubbles form on the surface (about 3-4 minutes).
4. Flip Pancakes and cook for a further 1-2 minutes until golden brown.

Berry Sauce: Place berries and stevia in a saucepan, simmer on a low heat for 4-5 minutes until mixture thickens slightly. Serve over the pancakes.
