Beetroot, Walnut and Fetta Salad


  • 1-2 bulbs beetroot, cooked and peeled and diced (canned without preservatives if not in season)
  • 2 cups mixed leafy greens
  • ¼ cup walnuts
  • 50gms crumbed Greek Fetta
  • 1 tsp Chia Seeds


  • 1 Tbsp Extra Virgin Olive Oil
  • ¼ Tbsp Balsamic Vinegar
  • Juice ½ Lemon
  • Celtic Sea Salt and Pepper to taste
  • Directions:

    1. Place all ingredients in a bowl.
    2. Mix dressing ingredients in a jar, shake well and pour over salad just before serving.
