Avocado Hash

  • 1 ½ cups sweet potato, peeled and grated
  • ¼ cup onion, finely chopped
  • ½ avocado, diced
  • 1 teaspoon fresh lime juice
  • 1 egg
  • ¼ cup LSA
  • 1 tablespoon olive oil
  • Dash white pepper
  • 3 cherry tomatoes, finely chopped
  • 2 sprigs fresh coriander, finely chopped
  • 2 tablespoons cottage cheese
  1. In a bowl, combine the sweet potato and onion.
  2. In a large pan, heat half of the oil, then sauté the sweet potato mixture until the sweet potatoes are softened and browned. Remove from the heat and allow it to cool.
  3. Add the rest of the ingredients to the sweet potato mixture and mix well.
  4. Form the mixture into patties and cook with the remaining oil in a frypan for 2 minutes on each side, until each patty is golden brown.
  5. Serve hot, topped with cottage cheese and tomatoes.
